Apricot Jam Recipe from Opa 2004
24 lb crate of apricots = 10 kg apricots
• Used Rival Apricots from Washington USA VA#1 1 7/8 in min. diameter
8 kg sugar
10 lemons – grate peel & add juice

Don’t wash apricots, pit, cut flesh into small pieces & leave overnight
Cook for 1 1/2 hrs+
• at 2 hrs the jam caramelized – depends on the flesh of the jam
