CUCUMBER RELISH
14 large cucumbers
8 large onions
3 sweet red peppers chopped
3 cups sugar
1 cup water
3 cups vinegar
3/4 cups flour
2 1/2 tsp dry mustard
1 tsp ginger
1 tsp tumeric
1/2 cup slat
Peel & remove seeds from cucumbers, cut into 8 wedges each
Peel & cut onions into 8 pieces each
Place in blender 40% full, cover with water & chop 5 to 10 seconds
Drain off water & put in bowl
Sprinkle with salt & let stand overnight
Next day - press out liquid well
Put all ingredients into pot & bring to a boil
Stir slowly & continuously for 10 to 15 minutes
Place into jars & seal
Yields 6 to 7 16 oz jars
