CUCUMBER
SALAD – from Nyusza
1 English cucumber
1 tsp. salt
1/3 c. white vinegar
2 1/2 tsp. sugar
1 sm. garlic clove, crushed
1/2 tsp. each of black pepper and paprika
Peel and slice cucumber thinly. Sprinkle with salt, mix and let stand for 1
hour.
Squeeze brine out from cucumbers and place in serving bowl.
Mix vinegar, sugar and garlic for marinade and add to cucumbers.
Let stand for 1/2 hour and sprinkle with paprika and black pepper prior to
serving.
*NOTE* - Serve with Chicken Paprikas, Pork Chops, etc.
Some people make this a creamy salad by adding mayonnaise, but you’ll have to
experiment to get this one.
