FRENCH ONION SOUP
10 onions, peeled & sliced
4 carrots, peeled & sliced
small chunk smoked bacon, diced
1 tblsp lard
1/2 hot banana pepper
3 pkgs chicken stock
10 pepper corns
salt to taste
To serve: rye bread croutons & shredded Gruyere
cheese
Saute bacon bits in lard.
Add onions & saute till golden
Fill large soup pot 3/4 full with water
Add peppercorns, chicken stock, salt, banana pepper, onions & carrots
Simmer for 1 hour
To serve, fill bowl 3/4 full with hot soup
Add croutons & cover with shredded Gruyere cheese
Broil till cheese melts
Serve
