GALUSKA -
Egg Drop Noodles
aka: Nokedli or Knockerl
4 c. flour
4 Large eggs
1 1/2 – 2 c. water
1/2 tblsp. salt
Mix ingredients in large bowl to a very thick elastic dough consistency (thick
wall paper paste; not runny, but almost).
Bring large pot of water to boil.
Add a pinch of salt and a tblsp. of butter to the water first to keep the
noodles from sticking.
Using a noodle mandolin, or a hot wet knife and cutting board, drop tsp. sized
bits of dough into boiling water for a minute or so.
When noodles rise to the top - they are done.
Remove them with a sieve, (the sieve has a handle and is made with stainless
steel fly screen-type mesh),
and place them into a serving dish, which already has a few tblsp. of sauce from
the chicken or the stew.
Stir and add more sauce to completely coat noodles.
*NOTE* - Serve with Chicken Paprikas or Paprikas Beef Stew.
