KAPOSZTAS TESZTA    – from Nyusza
PASTA with CARAMELIZED CABBAGE

1 large Cabbage
3 tblsp. salt
3 tblsp. sugar
+/-1/2 c. virgin olive oil
1 Pkg. (500gm.) large bowtie pasta

Shred cabbage into a large bowl, or cut into 3mm. (1/8”) strips; sprinkle with the salt, mix and let stand for 30 min.

Cook pasta in boiling water as per directions on package; do not overcook.
Drain and sprinkle with a little oil to prevent sticking.

Use a large non-stick coated frying pan with hot oil to gently brown the shredded cabbage; continuously stirring to prevent burning.
Add more oil as required as cabbage absorbs it.
When cabbage is uniformly browned, add the sugar and continue stirring till well combined and golden brown.
Add drained pasta and mix well.

Serve as is – sprinkle with freshly ground black pepper and sour cream.

NB: This is to die for as a separate standalone dish, but could be served with pineapple glazed ham and steamed sugar snap peas.
