PASTA with CARAMELIZED CABBAGE
1 large Cabbage
1 to 2 tblsp. salt
3 to 6 tblsp. sugar
3 to 4 tblsp. lard (Tenderflake)
Freshly ground black pepper
1 Pkg. (450 - 500g) bowtie pasta / farfalle
Cut cabbage into 1/4s. Remove heart.
Shred cabbage into a large bowl using mandolin or large holed shredder.
Sprinkle with the salt, mix and let stand for 30 min to 1 hour minimum.
Squeeze water from shredded cabbage & put aside.
Melt lard on high in large saucepan. Add sugar.
Stir continuously until melted sugar turns golden brown (caramelized).
Add cabbage to lard/sugar mixture & stir frequently.
Reduce heat to simmer & leave uncovered.
Stir while preparing pasta.
Just before adding pasta, add freshly ground black pepper.
Cook pasta
Pasta takes about 10 minutes after water reaches a boil & pasta added.
Drain pasta & add to cabbage.
Serve as is.
For savoury taste - add more pepper. Sour cream is optional.
For sweet taste - add more sugar on top.
Notes:
This is to die for as a separate standalone dish, but could be served with pork
roast.
Olive oil can be used in stead of lard.
Can be prepared as a sweet or a savoury dish.
The more sugar used - the sweeter the cabbage.
