KARTOFEL PUFFER

aka POTATOE PANCAKES, LATKES

INGREDIENTS:

2 to 3 kg potatoes
1/2 L milk - soured or butter milk
3 tsp flour
salt - 1 or 2 pinches

Sour cream or apple sauce.

DIRECTIONS:

Grate raw, peeled potatoes
Pour off extra watery liquid before adding rest of ingredients
Mix well to form batter

Melt lard in frying pan. Heat till hot.
Spoon in dough, spread with back of spoon.
Flip once. Serve immediately or keep warm in oven.

Serve with sour cream, yogurt or apple sauce.
Works well with fatty roast pork (Sauerbraten)
