LEMON SQUARES

Its a two baking process.

Base - first
1 cup of soft butter
2/3 cup confectioners' sugar
1 tsp vanilla
Cream together butter, 1/2 cup of confectioners' sugar, vanilla until light and fluffy.
Mix in flow until well blended. Spread evenly into a well buttered!!!
baking pan 13x9.
Bake for 20 min or until firm

Topping
4 eggs
2 cups granulated sugar
Rind of one lemon( I do two)
6 tbsp lemon juice( I am liberal here too usually two lemons)

Meanwhile stir (Do Not Beat) eggs, granulated sugar, lemon rind and lemon juice together until combined.
Pour egg mixture over baked layer.
Return to the oven for 18-22 minutes or until topping is set and lightly browned.

While still warm, sift additional confectioner's sugar over top to cover.
Cut into 1x2 inch bars when it is semi cooled.
I dip my knife in water and you will have to clean it often.
