POTATO & ONION SOUP

7 c. potatoes, diced
4 c. onions, diced
2 c. carrots, diced
4 tblsp. margarine
2 tsp. salt or salt substitute
1 tsp. black pepper
4 packets of chicken stock
10 c. water
10% cream
200 g. Swiss cheese, grated
200 g. gruyere cheese, grated

Soup Recipes – Crock Pot

Cook first 8 items in slow cooker for 3-4 hrs. on high or for 6+/- hrs. on low.
Puree in blender to coarseness desired.

Makes approx. 4 quarts.

Serve by reheating or fresh; add 2 tblsp. cream and a sprinkling of both cheeses to each serving.

Note: Leeks may be substituted for the onions if a more delicate flavour is desired.
