RED CABBAGE – from Nyusza

1/2 head of red cabbage
1 tsp. salt
2 tblsp. Vinegar
1 tsp. sugar
2 tblsp. Lard

Cut cabbage into thin long strips; sprinkle with salt, cover and let stand for 1/2 hr.
Melt lard; add sugar and caramelize till golden.
Squeeze water out of cabbage and add to hot caramelized lard and sugar mixture.
Cover and simmer on low heat, stirring occasionally for about 1/2 hr., or till cabbage is limp.
Stir in vinegar at end to taste.

*NOTE* - Serve with Breaded Chicken, Pork Chops, etc.
