SAVOY
CABBAGE – from Nyusza
600 – 800 g. Savoy cabbage (wrinkled leaves)
50 g. lard or margarine
40 g. flour
300 g. potatoes
1 clove of crushed garlic
1 clove of garlic
1/4 tsp. black pepper
1/4 tsp. salt
Wash cabbage and rip up leaves. Peel and cut potatoes into +/- 3/4” cubes.
Place cabbage, potatoes, whole clove of garlic and salt in covered pot, with
water just covering contents.
Bring to a boil and simmer on low till potatoes are soft.
Make “Rantas” or “Einbrenn” – melt lard, add flour and crushed garlic and stir
constantly till golden brown.
Drain (reserve liquid) potatoes and cabbage leaving 1 cm. of water in pot;
add “Rantas” to potatoes and cabbage; and bring to a boil.
Stir till mixture thickens; add in some of the reserved liquid to bring it to
the desired consistency (Like a thick veggie stew, or soft mashed potatoes).
*NOTE* - Serve with Paprikas Beef Stew
