TOK –
VEGETABLE MARROW – from Nyusza
3 vegetable marrows* or zucchinis
3 Tblsp. Salt
Vinegar
1 Tblsp. lard (“Tenderflake”)
1-2 Tblsp. flour
1 tsp. paprika
1 can, 370 ml. evaporated milk or sour cream or table cream
1 Tblsp. dill
Peel and grate fleshy part of vegetable marrows into long strings with larges
slots on grater or use a mandolin.
Sprinkle with salt and add 2 tblsp., vinegar; toss, cover and let stand for 1
hour.
Squeeze water out and steam in melted lard, covered for +/- 10 min. or until
tender.
Add 1/8 tsp. salt, paprika and flour ; turn off heat and stir. Mix in evaporated
milk just before serving.
Add vinegar to taste at table.
*NOTE* - 3 large vegetable marrows or 9 med. sized ones ( +/- 8” long = med.).
They have a lot of seeds and reduce a lot after water has been squeezed out.
