TOMATO SALAD
5 large tomatoes, cut into chunks (1/8ths in half)
3 small seedless cucumbers or zucchinis - sliced into bite size pieces
3 green onions chopped
Marinade
3/4 c olive oil
1/4 c red wine vinegar
3 garlic cloves, minced (frozen cubes)
1 tblsp minced fresh parsley or 2 cubes frozen minced parsley
1/2 tsp salt
Optional Addition - to make like a Greek Salad
1/2 lb feta cheese
black wine vinegar olives
Whisk marinade, pour over vegetables & refrigerate for at least 4 hours.
